Warning: I just tried cooking steak in a pan with butter versus a grill and it's not even close

I did a side by side test last night with two ribeyes from the same pack. One went on my gas grill, the other I did the fancy pan method with a whole stick of butter and herbs. The pan one looked good, sure, but the crust was soft and the inside tasted more like butter than beef. The grilled one had that real char, the fat got crispy, and the meat flavor came through clean. I spent like 15 minutes basting that pan steak and it just steamed in its own juices. The grill took 8 minutes total and was way better. Has anyone else found that some trendy cooking methods just mute the main ingredient?

My uncle's grill in Texas ruined pan steaks for me too, drew_park.

Just spent forty bucks on fancy butter to learn this same lesson. My pan steak looked like a magazine cover but tasted like I was chewing on a salted candle. The grill gives you that simple, honest beef punch that no amount of melted dairy can fake. I guess some trends are just for looks.

Yeah, that "honest beef punch" is the whole point. All that butter just makes a fancy sauce, it doesn't get into the meat itself. A hot grill gives you that crust you can't fake in a pan.
