Showerthought: My mom's 'just add a pinch of sugar' advice for tomato sauce actually fixed my acidic batch last night.

I was ready to toss the whole pot, but a teaspoon of sugar balanced it right out. Does anyone have other quick fixes for when a sauce goes wrong?

Feel for you, I've been there with a sauce that was way too sharp. Sometimes you just need to save dinner and move on with your night, right? Not every meal has to be a perfect slow-cooked masterpiece.

Just add a pinch of sugar" always masks the problem instead of fixing it. You need to cook the sauce longer to break down the acids properly. A quick sugar fix just makes a sweet, undercooked sauce.
