My neighbor's 3-year-old pointed at my cutting board and said 'why you fight the onion' and I finally understood why my eyes always burn.
I've been chopping onions with the grain instead of against it for my entire cooking life, which makes them release way more of that eye-stinging juice, and now I want to know what other basic kitchen things I've been doing wrong this whole time.

Honestly I've never noticed a difference with the grain thing, my eyes water either way. Tbh I think it's more about how sharp your knife is than which way you cut. A dull knife just mashes the onion and makes it worse.

Oh my god, the sharp knife thing is so real. I used to just grab whatever was in the block and hack away. Switched to actually keeping one knife sharp and it's a total game changer, way less mush and crying. That and I started chilling onions in the fridge for a bit before cutting, which seems to slow down the juice spray. Made a huge difference for me.
