Hot take: Don't trust those 'no-knead' bread recipes if you're in a hurry.

I tried one last weekend and it turned into a dense brick. The rising time was way off, and I ended up wasting good flour.

Actually, I've made great no-knead loaves before. The rise time is crucial, so you can't cut corners. Sounds like you might have rushed the rising.

Totally true about the rise time. I messed up a batch last month when I only let it sit for four hours instead of twelve. The loaf came out so dense you could've used it as a doorstop. Patience is everything with that method.

Honestly, my first no-knead loaf was a disaster until I stopped watching the clock. The room was just too cold that day, so I let it go for a full eighteen hours until it looked properly bubbly. Warmth matters way more than the exact hours on the recipe.
