Why does nobody talk about how good cold mac and cheese is

I ate leftover mac and cheese straight from the fridge last night and it was way better than when I reheated it. The cheese got this weird firm texture that reminded me of the school cafeteria trays from the 90s. Am I the only one who actually prefers it cold?

Heard someone on a food podcast say cold mac and cheese tastes better because the flavors have time to set overnight. Makes total sense after that fridge cheese texture you mentioned.
