Tried ketchup on mac and cheese after 20 years of hating it, now I get the hype but my stomach doesn't
Last Tuesday I finally gave in and mixed a big spoonful of ketchup into a bowl of my mom's baked mac and cheese, the kind with the crispy top. At first it tasted like sweet tangy heaven, I actually ate the whole bowl and felt great for about 45 minutes. Then the reflux hit me like a freight train, I was up until 2am with heartburn and a weird regret feeling. I learned that my body just cannot handle that combo, even though my taste buds screamed yes. Has anyone else had a comfort food twist that tasted amazing but messed with you physically for hours? Maybe I just need to use less ketchup next time or try it with a different cheese blend, but I'm scared to risk another night like that.

What saved me was switching to a sharper cheese like extra sharp cheddar, since the tang cuts through without needing as much ketchup, and I only use a thin drizzle now instead of a big spoon. Also try eating it earlier in the day so you're not lying down with a full stomach at midnight.
