My mac and cheese failed hard with cottage cheese instead of cheddar

Last Sunday I tried making a quick comfort mac by swapping in cottage cheese for the cheddar because I was out, and it turned into a watery, curdled mess in the pan. I ended up tossing the whole batch and ordering pizza instead, which felt like a betrayal of cozy food. Has anyone else found a weird cheese substitute that actually works for mac and cheese?

Oh man, I feel your pain on that "betrayal of cozy food" part. I tried the same thing once with low fat ricotta and it turned into this weird grainy soup situation, I swear I could hear my grandma rolling over in her grave. Never again.

Dude YES! I tried that with low fat cheddar once and it turned into this rubbery, sweaty blob that somehow tasted like sadness and regret. I was making mac and cheese for a party and ended up ordering pizza instead because nobody was gonna eat that mess. Never again is right. Full fat or bust, that's my motto now.

My third attempt at low fat cheese was basically a science experiment gone wrong, I ended up with something that looked like melted plastic. I tried to pass it off as a "deconstructed mac and cheese" and my friends just stared at me like I lost my mind. Now I just tell people my cooking motto is "fail early and order pizza often.
