I used to hate cold pizza for breakfast until last Sunday changed my mind

For 32 years I thought cold pizza was disgusting, always reheated it in the microwave until it got rubbery. Then my friend Jen in Denver made me try a slice of her leftover pepperoni from Anthony's Pizza that had sat out overnight. It was actually good, the cheese had this firm texture and the sauce tasted stronger and better cold. Has anyone else had a random revelation like this where you suddenly got why people love something you swore was gross?

Jumped right into a conversation with my buddy Mike last year about this exact thing. He swore blind that cold Chinese takeout was the grossest thing ever, but then his roommate left a container of lo mein on the counter overnight. He tried a bite the next morning and said the noodles had this weirdly perfect chewy texture and the sauce was way less greasy. Now he actually lets his takeout cool down on purpose before he puts it in the fridge. He even calls it "strategically chilled leftovers" which is both ridiculous and kind of true.

Ha, I love how one accidental discovery can flip your whole worldview. It's like how people swear they hate cold pizza until they actually try it at 2am and realize it's basically its own food group now. Mike's "strategically chilled leftovers" is honestly just a fancy name for what most of us eventually figure out: some foods actually get better when you let them sit and settle a bit.
