Cold mac and cheese straight from the fridge, my guilty pleasure
After a long day at the office in Columbus last Tuesday, I grabbed a Tupperware of leftover mac and cheese and ate it cold over the sink. My wife walked in and gave me a look like I'd lost it, but the firm pasta and congealed cheese just hits different. Anyone else out there defend this habit, or am I truly alone in this?

Firm pasta and congealed cheese" is exactly right, that's the whole magic of it. I think there's a bigger pattern here where we're so used to eating everything hot and fresh that we forget some foods actually get better once they settle and chill. Same thing happens with cold pizza or yesterday's chili, the flavors just sink in and mellow out. It's like our brains are wired to think "cooked = good" but the fridge does its own kind of work overnight. Honestly, I'd rather have a cold forkful of that than a lukewarm microwave version any day.
