Cold mac and cheese finally makes sense to me now

I always thought eating leftover mac and cheese straight from the fridge was gross, but my sister in law kept doing it and said the cheese gets firmer and the noodles turn chewy like a snack. She dared me to try a forkful last Friday and I got why people do it, the texture totally changes in a good way. Anyone else convert to cold pasta after years of reheating?

Oh man, cold mac and cheese is a total game changer once you get it! I had the same reaction last year when my roommate caught me reheating some and just handed me a forkful straight from the tupperware. The noodles get this almost jerky-like chew and the cheese clings to your teeth in a way that hot mac never does. I started mixing in a little hot sauce or a shake of paprika when I eat it cold now, takes it to another level. Have you tried it with a crunchy topping, like crushed chips on top?

Remember reading a food science thing that said cold pasta changes the starch structure, makes it more like a firm bite instead of mushy. That totally clicked for me when I tried cold leftover noodles in a salad once, the chewiness is a whole different experience. It takes a couple tries to get past the mental block, but once you do there's no going back to the microwave.
