Appreciation post: cold leftover spaghetti straight from the fridge
My roommate caught me eating cold spaghetti out of the container at 11pm last night and looked at me like I grew a second head. She said it's gross but I swear the sauce gets thicker and the noodles get chewier in a good way. I've been doing this since I was a kid at my grandma's house in Philadelphia. Anyone else got a cold leftover habit that people judge you for?

Honestly this makes total sense to me. It's like how some things just taste better the next day because the flavors have had time to settle in and get friendly with each other. People act like cold food is breaking some rule but food is food and if it hits right it hits right.

Man, you're speaking my language! Cold spaghetti is a top tier midnight snack. My mom used to think I was crazy for eating cold pizza the morning after, but I swear the cheese gets this weirdly good firmness and the sauce soaks into the crust just right. It's the same thing with leftover Chinese takeout lo mein, cold noodles have a totally different texture that hits better than reheated rubber. Your roommate just doesn't get it yet, but they'll learn. What's your go to sauce for the cold spaghetti trick?

My grandma in Philly used to keep a Tupperware of cold spaghetti in the fridge just for me when I visited, it was basically a tradition. @sagew50 you're totally right about the sauce getting thicker, it clings to the noodles way better than when it's hot and runny. I also do the same with leftover chili, cold from the can the next morning with a spoon, people act like I'm feral but it's just a different experience. Cold pizza is a given, but have you ever tried cold meatloaf with ketchup?
