My grandpa kept a spiral notebook of recipes, all in his cramped handwriting, with vague notes like 'a pinch of salt, maybe more if it's cold out.' He could nail a pot of chili every time without measuring. I use a cooking app with timers and gram measurements, and my chili tastes okay but never quite like his. He swore the cast iron skillet from 1962 made the difference, while my app says it's about the sear temperature. So here's my question for this group: when did we trade feel for precision, and did we actually lose something in that swap? Has anyone else gone back to the old way and found it better, or am I just romanticizing burnt food?
