Properly sharpen" is a bit of a moving target with a straight razor. The real test is how it feels on your face, not just getting a burr off the stone. You'll probably keep finding little improvements in your technique for years.

Nah, that's overcomplicating it. A sharp edge is a sharp edge, and you can measure that with a burr. If you can't get a clean burr off your stone, you're not done sharpening. The face test is just guessing. You need a clear, repeatable step in the process to know you're done. Otherwise you're just rubbing metal on a rock hoping for the best.
