Here's why my local taco stand beats any fancy food truck every time

I ate at two places in Austin last Saturday for lunch, one was a taco truck with a line of 30 people and the other was a hole-in-the-wall spot with plastic chairs. The truck had fancy toppings and Instagram vibes but the food was cold and the tortillas fell apart after two bites. The stand used a simple griddle and fresh masa and I still think about that carne guisada three days later so why do people hype up trucks so much?

Stick with the hole-in-the-wall every time. Trucks are trendy but they're running off generators and limited space, so cold food and bad tortillas is pretty common. A place with a permanent griddle and a real kitchen has been doing it right for years. You also don't have to stand in the sun for 30 minutes waiting on some guy to figure out a flamethrower garnish. Find the spot with the faded menu and the same cook working it every day, that's where the real meals are.

Look, I been burned by too many $14 taco truck burritos that fell apart before I got back to my car. You can see the dry erase menu fading in the sun and thats a warning sign. The last truck I hit had a guy using a blowtorch on cheese right in front of me like it was a cooking show. @angelar57 nailed it, the real spots have a dented metal spoon and the same lady says "you want extra jalapenos?" before you even sit down. If the place doesnt have a permanent grease stain on the floor from the last decade, I dont trust it.

My neighbor runs a taco truck that's been parked in the same lot for twelve years, and that faded dry erase board is basically a family heirloom now. It's like how the best pizza joint in town has a neon sign that flickers and a table that wobbles, but you still go there because the food is consistent. Shows how we all get tricked by shiny new things when the real treasure is just worn down from years of doing it right, you know?
