Just realized my quick vegan meals were missing something big
Letting a curry simmer all afternoon (something I never had the patience for) showed me how depth of flavor comes from time, not just spices.

Wait you let it simmer ALL AFTERNOON? I get impatient after like 20 minutes. My "slow cooked" meals are just regular cooked meals. You're telling me my lentils need more than 40 minutes to stop tasting kinda flat? This is a whole new level of cooking I am not ready for.

My friend rushed a chili once and it tasted like spicy water! Some things just need time to get good.

Honestly, sometimes a quick chili hits the spot (sorry @luna_kelly). Not everything needs to simmer for hours to taste good.
