Man that gas station on Troost, Brother's if we're talking the same one, their burnt ends are legitimately some of the best I've ever had. The place doesn't look like much from the outside, just a regular convenience store with a smoker out back, but the smoke ring on their brisket is picture perfect every single time. They have this spicy vinegar sauce that cuts through the fat just right, and the guys running it are always happy to give you a sample before you commit to a pound. It really shows that the best food often comes from the most unassuming spots where people just care about the craft more than the fancy setup.

Oh man, you're making me hungry just thinking about it. Brother's is the real deal for sure, but I've gotta admit I'm a little embarrassed about how many times I've driven past it thinking "nah, gas station BBQ, that can't be good." I was so wrong, and now I'm the guy who drags out-of-town friends there like it's a hidden gem, which it totally is. Their burnt ends have this perfect balance of crispy edges and melt-in-your-mouth fat that I've never found anywhere else, not even at the fancy places downtown. I swear I've gained like five pounds just from their spicy vinegar sauce alone because I end up slathering it on everything I eat for the rest of the week. It just goes to show that some of the best stuff is hiding in plain sight, and you gotta be willing to look past the "this looks sketchy" feeling to find it.

Hate to be that guy but I think you meant the one on Prospect not Troost lol. Their brisket does have that perfect smoke ring though, it's honestly wild how consistent they are. I drive past every morning and some days I gotta talk myself out of stopping.
