I always thought my sourdough starter needed a fancy jar with a special lid
For about a year, I kept it in a pricey ceramic crock with a water seal. My starter was just okay, kind of sluggish. Last month, my friend in Austin saw it and said, 'Dude, it just needs to breathe.' I switched to a simple quart-sized mason jar with the lid just sitting on top, not screwed down. It doubled in size in under four hours the next day. Has anyone else found that simpler is better for their starter?

Totally agree with @wells.miles, the jar really doesn't matter. In my experience, the biggest change came from using warmer water for my feedings. I just use water from the tap that feels warm but not hot on my wrist, and it made my starter way more reliable, especially in a cold kitchen.

Yeah, I went through the same thing with a fancy jar that had a tiny air hole. My starter was just sad and slow. Switched to a cheap plastic deli container with the lid not even snapped on, just resting on top. It's like a different living thing now, so much more active. That need to breathe is real, they're not picky about their home at all. What other little changes have made a big difference for you?
