A chat with my neighbor about his kimchi fridge made me feel a bit silly

I was helping my neighbor, Frank, move some stuff last weekend, and he showed me his garage setup. He has this old, small fridge he got for $50 off a local listing, and he uses it just for his kimchi and sauerkraut ferments. I always kept mine on the counter or in my regular fridge, you know, dealing with the smells and the mess. He said, 'Having a separate space lets each batch do its own thing without fighting for real estate.' It hit different because I realized I was making it harder on myself, trying to fit my hobby into my normal kitchen life. I was worried about buying a whole extra appliance for just one thing. But seeing his simple, dedicated spot made it seem less like a big project and more like just giving the process its own room. Has anyone else set up a separate fridge like this, and did it change how often you try new ferments?

Sounds like more stuff to clean to me.

Oh man, that's such a good point. It turns a chore into its own little project space, which honestly makes me way more likely to actually experiment.

Right, @tyler_wilson? Suddenly chores are fun.
