He insisted the extra 20 minutes to mix your own from powder gives you way more control over the consistency, especially in dry air, and that one mess proved his point.

Disagree completely. A bucket going bad is a sign of poor storage, not a problem with the product itself. Keep it sealed and in a cool place and it lasts forever. This sounds like a user error situation.
