Warning: my oil temp probe gave false readings and ruined a 15 pound turkey fry

It happened last Thanksgiving at my place in Denver. I was using a cheap probe thermometer I got off Amazon and it said my peanut oil was at 350, so I dropped in the bird. After 5 minutes I noticed zero bubbling and checked with a instant read thermometer and it was barely 280 degrees. The turkey came out greasy and sad with rubbery skin after 45 minutes of frustration. Has anyone else had a probe fail on them or do you stick with a specific brand that's more reliable?

Dude 15 pounds of turkey and a greasy mess. That's brutal. I've had cheap probes lie to me too, now i just set a timer and keep a instant read nearby cause I don't trust anything under $30.
