Used to swear by peanut oil for everything fried

Last month my buddy Dave brought over some sweet potato fries he did in beef tallow and I honestly couldn't argue with the flavor. Has anyone else made the switch from vegetable oils to animal fats for deep frying?

Just my luck I'd burn duck fat and start a grease fire.

Bet you never tried duck fat for frying potatoes either lol. I picked up a tub at the farmers market on a whim and my frenchies came out way crispier than anything I got with regular oil. The smoke point is higher so you don't get that burnt taste as easy. Just wish it wasn't so expensive or I'd use it for everything.

Duck fat is a total game changer @tyler6, I tried it last year after seeing someone rave about it online and now I hoard it like gold. The crunch is unreal and it doesn't smoke up the whole kitchen like vegetable oil does.
