The day a gas station clerk in Tulsa made me question my batter recipe

I stopped at a random place off Route 66 last summer and this old guy at the counter was eating fried okra out of a paper bag. He saw my Deep Fry Or Die shirt and said 'your batter is too thick, you're drowning the vegetable inside'. He showed me how he just does a light dusting of cornmeal with salt and cayenne, no egg wash or flour. I tried it next weekend with some okra from my neighbor's garden and it was way crispier than anything I've ever made. Anyone else have a stranger call out their deep frying methods like that?

That "drowning the vegetable inside" line really stuck with me too. I had the same problem for years, my batter was way too heavy and I was basically making okra dumplings instead of crispy bites. Switched to just cornmeal with a little cayenne and garlic powder, no egg wash no flour, and it was a total game changer. The trick is to let the okra sit for a few minutes after you dust it, so the moisture from the veg helps the cornmeal stick without being all clumpy. Now I get that light, shattery crunch instead of a soggy mess, and I never bother with anything fancy again.

Hey @lindamartin I get where you're coming from but I've got to push back a little. That heavy batter you're talking about gives you that satisfying crunch that holds up to ketchup or hot sauce without getting soggy after two bites. Cornmeal dusting is fine for a quick snack but if I'm firing up the deep fryer I want something that feels like a real meal, not a light coating that disappears.
