Ruined 3 batches of onion rings at my sister's wedding shower in Mesa, then fixed it with a $4 thermometer
I volunteered to fry onion rings for my sister's bridal shower at her place in Mesa back in April. I had the oil going in a big cast iron dutch oven on her back patio, no thermometer, just eyeballing it like always. First batch went in and the batter slid right off into the oil, just a mess of floating crust and raw onion. I panicked and cranked the heat, which made it worse, and by batch three I had a pot of burnt oil and 40 guests staring out the sliding door. My brother in law handed me his $4 dial thermometer from his grill kit and told me to check the temp. It was sitting at 290 when the rings needed 375, which is why the batter kept soaking up oil and falling apart. I got it back up to temp, did a test ring, and the coating stuck and crisped in about 90 seconds. Ended up frying 60 rings in the last 20 minutes and nobody knew anything went wrong. Does anyone else think a thermometer is overkill until the exact moment it saves you?
