Rant: A guy at the state fair in Des Moines ripped my corn dog out of the oil at 90 seconds and I'm still thinking about it
I was working the fryer at a fair booth two summers ago when this older guy came up, watched me drop a fresh corn dog, and pulled it out himself after a minute and a half saying 'anything past that and you're just boiling the batter.' I wanted to be mad but the crust on that thing was so light and even that I quietly changed my whole drop time that same shift. So what's your number, is 90 seconds crazy or was I frying them way too long this whole time?

Wait, so if 90 seconds gives that light crust, what happens between 90 and 120 that makes it heavy?
