I finally realized I been preheating my cast iron pan wrong for years

Was making steaks last night at like 11pm and saw the pan smoking before I even added oil. Tipped me off that I was supposed to let it heat up slowly on medium not blast it on high. Anyone else do this or just me?

Wait, you seriously didn't know that? Bro, that's like finding out you've been putting diesel in a regular car for years. I gotta say, the fact that you saw smoke before even adding oil and it still didn't click until later is honestly amazing to me. Not trying to be mean, but that's a pretty big cooking oops. At least you figured it out before you warped the pan or set off the fire alarm with a half-cooked steak. Glad you caught it though, medium heat is way more chill once you get used to it.

Bacon grease on a cold skillet is the real pan killer.

That "blasting it on high" thing is exactly how I used to ruin pans too. I think it's one of those things we do with everything now, like we're always in a rush so we crank up the heat and expect instant results. Reminds me of how people treat their cars, stomping the gas from a dead stop thinking it gets them there faster but it just wears everything out.
