The grease pit at that truck stop in El Paso taught me more than any safety video

Three weeks ago I was on a job near the I-10 exit, waiting out a dust storm. Walked into the truck stop diner and there was this old timer, 70s, wiping down the counter. He saw my hard hat and asked what I do. Told him commercial buildouts. He said, 'Son, watch the grease pit.' Confused the hell out of me. He pointed out back. A grease trap that had overflowed because some crew poured cooking oil down the drain. Next day on our site, I noticed the same damn thing. Helper dumped a bucket of joint compound slurry down a floor drain. That pit clogged by Tuesday, cost us $900 in pump fees. Since then I walk every site looking for the low point, the drain, the pit. Has anyone else had a random stranger's comment save them from an expensive mistake on a job?
