Why does nobody talk about pour over bloom times for old beans?

I used to skip the bloom step entirely, thought it was hype. Then I tried a 45 second bloom on some 3 month old beans from my pantry and the cup went from bitter and flat to actually sweet. That extra minute changed my whole morning routine, has anyone else seen a big difference with stale beans? What's your longest bloom time?

45 seconds on three month old beans" sounds long, but that extra minute only matters if the water's hot enough to actually release the gas.
