Tried grinding my beans 15 minutes before brewing instead of right before and the flavor changed completely
I always thought fresher is better so I'd grind right as the water boiled, but after reading about degassing I let the grounds sit for a quarter hour and the cup was way smoother with less bitterness - has anyone else noticed a difference with a short rest time?

12 minutes is the sweet spot, anything less tastes flat to me.

Tbh that "12 minutes is the sweet spot" idea sounds like pseudoscience. Degassing happens over hours or days, not minutes, so a 15 minute rest is more about letting the grounds cool down than any gas release.

Double down on that flatness idea, @thea857 - if 12 minutes is your sweet spot, maybe the "flat" taste is just the coffee actually settling into its real flavor profile instead of that initial sharp over-extracted edge.
