The bag of beans I bought had a roast date on it - game changer for my morning cup

I grabbed a bag from a local roaster in Portland a few weeks ago and noticed they stamped the exact roast date, not just a best by month. Turns out coffee peaks around 4 to 10 days after roasting, not right away like I always assumed. I've been checking dates on every bag since then and the flavor difference is huge. Anyone else keep an eye on roast dates or am I just late to the party?

Maybe it's just me but I've never noticed that much of a difference with roast dates. I've had beans that were two weeks old and they tasted fine, or even better than the four day old ones that were still a little too acidic. Freshness matters but I think people can get a little too caught up in the exact day count.

Did your friend ever try leaving them in the car on a sunny day? My buddy Derek did that with a bag from Costco and swore it ruined the whole batch, couldn't even finish the cup.
