That week my old drip machine died and I had to figure out pour-over at 6 AM.

Actually a drip machine dying is the perfect excuse to never go back. I switched to pour over full time about three years ago. The first week is rough but your morning routine gets way faster once you nail the process. You end up with way better coffee for half the cost of those machine pods.

Way better coffee" feels like a stretch. It's just coffee, not a life changing event. My old drip pot was fine and took two seconds.

Totally get where you're coming from. I felt the same until my machine broke and I tried a cheap pour over setup. The big thing for me was tasting the actual coffee, not the paper filter or plastic taste from the old pot. It's like hearing a song on good speakers for the first time, you notice details you missed. Now my morning coffee is the one quiet thing I actually look forward to.
