My wife dared me to try a month of only instant coffee to see if I'd notice

She bet me $50 I couldn't tell the difference in a blind taste test with my usual pour-over setup. I lost the bet after the first week because the instant stuff just tasted like hot brown water, no matter what I did. Do you think there's any good instant coffee out there, or should I just take the L and stick to my grinder?

Hot brown water is about right. You're making it sound like a crime scene when it's just bad coffee. Nina_jenkins has the right idea, it's a lost cause. Good instant is still instant, it's a totally different drink. You lost the bet, so just go back to your fancy beans and be done with it.

Hey now, it's not a lost cause at all! Robert_anderson69 calling it "hot brown water" is exactly the problem, that's just bad instant. I tried a really good one from Japan that actually had real flavor, like a light tea almost. It won't beat a fresh pour-over, but for a 60-second cup? It totally changed my mind. The bet was about finding a decent instant, not a magic bean replacement.
