My local shop's 'perfect' pour over was way too bitter for me
I was at The Daily Grind in Springfield last week and ordered their featured single-origin pour over. The barista, Mark, insisted it was a perfect 3-minute extraction. To me, it tasted harsh and over-extracted, nothing like the bright notes on the card. I politely asked for a bit of hot water to dilute it, which helped a lot. Does anyone else find some shops push extraction times that just don't work for your taste?

That barista training video I saw said three minutes is just a starting point.

Yeah but @simonp47, that's for a proper pour over, not your average drip machine.
