My buddy the barista made me doubt my whole pour over routine
So I was at Caffè Vita in Seattle last Friday, and my friend Danny who works there told me I was overcomplicating my morning brew. He said I didn't need a gooseneck kettle or a fancy scale for a basic cup, just hot water and patience. I fought him on it for like 20 minutes, but then he made a pour over with a regular tea kettle and honestly it tasted almost as good as mine. It got me thinking, how much of this hobby is ritual versus actual flavor improvement for regular days? Has anyone else had a pro tell them to simplify and was it actually right?
My old boss at a coffee shop did the same thing to me and it totally messed with my head. Turns out the beans and the grind matter way more than the fancy gear, and most mornings I honestly can't taste the difference. The ritual is nice and all, but the water and the pour are doing most of the work.
