Just realized cheap beans taste better with a longer rest time
Everyone says to use fresh beans. Like 3-5 days off roast. But I accidentally left a bag of $8 supermarket beans for 3 weeks. Brewed it anyway. Way smoother. Less bitterness. Tried it again with another cheap bag. Same result. Now I let budget beans sit for 3-4 weeks before brewing. Anyone else find this works?

Wait, aren't you losing all the delicate flavors by letting beans sit that long? Freshness is supposed to lock in all the good stuff, not let it fade away. Seems like you're just getting a flat, one-note cup that way.

You mention "delicate flavors" but I think you're missing that some coffee actually gets better with a little air. I've found that really bright, fruity natural processed beans can taste way too sharp right after roasting, almost like unripe fruit. Giving them a week or two lets those acids mellow out and blend together better. It's not about losing flavor, it's about the flavors settling into something more balanced. Freshness is great but there's a sweet spot where the coffee opens up and shows you layers you didn't taste on day one. Try a bag after 10 days and see if you still think it's flat.
