Guy at the roastery said cold brew should never go past 14 hours steep time

I've always done 24 hours myself but he was adamant that anything past 14 extracts bitter stuff you can't taste. Has anyone actually tested side by side to see if there's a real difference?

Wait, didn't James Hoffmann or someone test this and say longer steeps can work if you coarse up the grind? I've seen a few folks online swear by 18-20 hours with a really chunky grind and they say it's smoother.

Does the extra coarseness actually stop bitterness or just change it?
