A stranger in Portland told me my pour over was too fast

I was at a coffee cart downtown and the guy next to me just pointed at my kettle and said, 'You're pouring like you're in a hurry, man.' He was right, I was rushing. Ever had someone give you a coffee tip that actually stuck?

Yeah, a barista once told me to count the seconds between pours. Started doing a slow three count, letting the water drain almost all the way before adding more. My coffee got way less bitter.

My old roommate used to time his pours with a metronome app set to 60 bpm. It felt silly but honestly, it worked. I mean, slowing down really does change everything.
