A barista told me my pour-over water temp was way off for 6 months

I've been doing pour-over at home for like half a year now. Thought I had it dialed in pretty good. Then last Saturday I went to a local shop and the barista asked what temp I use. I said 'right off boil' and she just kinda winced. She showed me their setup with a gooseneck kettle set to 205 and let me try a pour from theirs. Night and day difference in taste. Mine always came out bitter and I just thought that's how it was supposed to be. Has anyone else had a simple fix like this change their whole coffee routine?
