Appreciation post: Kitchens that source local are killing it for the climate

Long haul food shipping pumps out so much crap. Sticking to regional growers slashes that junk and boosts flavor, end of story.

Local sourcing sounds great but misses the bigger picture. A tomato shipped from a sunny, perfect climate might have a smaller total footprint than one grown locally in a heated winter greenhouse. Efficiency matters more than distance. Some regions just grow certain foods way better with less water and fertilizer. Blind localism can actually waste more resources overall.

Man, karen_perry38 has a good view on how things are grown. I used to only buy local without thinking. Then I learned distance isn't the only thing that matters. Now I check how food is produced, not just where it's from. Like getting oranges from a sunny place instead of a heated local greenhouse in cold months. That saves a ton of energy and still eats good.
