Found out my favorite coffee shop uses 18 year old espresso machine
I was chatting with the barista at Brew & Grind on 5th Street last Tuesday and she casually mentioned their espresso machine is from 2006. I was totally shocked because their coffee tastes amazing and consistent every single day. She said they've only replaced the gaskets and seals twice in all that time. The owner apparently refuses to upgrade because he says newer machines make coffee too fast and miss the depth. Has anyone else noticed old equipment doing a better job than new fancy stuff?

Old equipment lasting that long isn't really that surprising, honestly. Coffee machines are pretty simple devices when you get down to it, and 2006 isn't exactly ancient history. My parents still use a microwave from 1998 that works fine. The whole thing about newer machines making coffee too fast just sounds like the owner making an excuse to not spend money on a new one. Plenty of modern machines can make great espresso at any speed if you know what you're doing.

Respectfully, I think you're missing the point about the speed thing. An 18 year old machine that's been maintained that well probably has a different kind of heat stability and pressure curve than a brand new one. Sometimes older tech just has a better feel for the process, even if it's slower.
