Why does nobody talk about how much butter restaurants actually go through

I was doing inventory at my buddy's place in Austin last month and we counted 40 cases of butter for one week of service. Forty. That's like 480 pounds just for a mid size spot doing brunch and dinner. I knew kitchens used a lot but that number hit me different. Does your place track butter usage per shift or do you just order when you're low?
