Walk-in cooler died at 6pm on a Saturday during a 90-cover service

Compressor just gave out. Had to move everything into our backup reach-ins and pray it fit. Lost about $200 in prep that was half done. Anyone else have a backup plan for when your main cooler craps out on a busy night?

Eight years ago my buddy who runs a pizzeria had his main walk-in die on a Friday at 5pm right before a 150-cover rush. He had to haul everything into two small beer coolers and a fridge under the counter. Lost all his prepped dough for the night and about $300 worth of toppings he had ready. He ended up making a deal with a food truck guy parked nearby to store stuff in his truck cooler overnight. The whole thing taught me that having a written agreement with a neighbor restaurant or a repair guy who answers on weekends is worth its weight in gold, your mileage may vary of course.

Same thing happened to my cousin's taco stand, lost all his carnitas.
