TIL I wasted $300 on a fancy chef's knife set that can't hold an edge for more than a week
Bought a flashy 8-piece knife set from a big box store in Denver last January. After 3 months, the blades are duller than my old $20 Wusthof from culinary school. Has anyone else had luck with just buying a single good knife instead of a whole set?

Honestly, I used to think sets were the way to go too until I bought a single good chef's knife.

Started noticing the same thing with tools and clothes and even tech gadgets. People get duped into thinking matching sets are necessary for quality, but really you just need one good version of the thing you use the most. My roommate spent $400 on a matching cast iron set and still uses my one $30 pan more often because it heats better. There's something nice about knowing exactly what a single tool can do instead of juggling a drawer full of stuff you barely touch.
