The worst shift of my life was because we ran out of the good salt

Last Friday, our main supplier shorted us and we had to use this cheap, iodized table salt for the whole dinner service. Every single dish tasted flat and wrong, and the head chef was yelling about the mashed potatoes for an hour. Has anyone else had a whole night ruined by one basic ingredient?

Honestly that sounds like a skill issue more than a salt problem. Good cooks can make decent food with basic stuff. Maybe the kitchen just had an off night and is blaming the salt.

Exactly, seen that excuse a hundred times.

but @finleyf88 you gotta think about it from the other side too. if the salt is literally wrong and the kitchen is screwing up the whole recipe, no amount of skill fixes a bad baseline. it's like blaming the driver when the car has a flat tire.
