The 3 a.m. ticket printer jam taught me to prep smarter

Last Saturday during a brutal rush in Austin, our ticket machine jammed twice in 15 minutes. I started writing orders on the back of a receipt pad while my expo guy kept shouting times at me. Now I keep a backup paper checklist near the pass and it saved us twice this week during the same dinner window. Anyone else got a go-to system for when equipment fails mid-service?
