That one time a dishwasher changed how I prep mushrooms

Back in '09 I worked a line in Chicago and this kid from Mexico, maybe 19 years old, showed me he'd wipe each shiitake with a damp cloth instead of rinsing them under water. He said the water soaks in and kills the sear. I still do it that way over 15 years later. Anyone else got a weird tip from a random coworker that stuck?

Totally. Moisture's the enemy of a good sear.

Totally agree with @simonp47 on that. I took it further and started patting all my mushrooms dry with paper towels right before they hit the pan, even the creminis and buttons. That little extra step makes a huge difference in getting a nice golden color instead of a sad steamed look.
