Sous chef walked out mid dinner rush on Saturday, do I tell the owner or cover it up?
Our sous chef at the spot in Portland walked out at 7pm on a packed Saturday because he wanted to leave early for a concert. I ran the line solo for 3 hours and we somehow got through service, but now I'm stuck on whether to tell the owner or just say he got sick. Do I throw him under the bus or keep it quiet and hope it doesn't happen again?
So the sous chef "wanted to leave early for a concert" and just peaced out at 7pm on a Saturday? That is wild. Honestly, if you cover for him with the sick excuse, you are basically teaching him that walking out is fine as long as you clean up the mess. Tell the owner the truth, because you ran the line solo for 3 hours and you deserve credit for that, not a secret you have to carry. Sure, he might get fired and you might feel bad for a bit, but that is on him for ditching you, not on you for being honest.
