Rant: nobody sharpens their knives anymore and it shows
Worked a prep shift at a spot in Duluth last week and the house knives were so dull I had to saw through a tomato. When I came up, we all carried our own steel in a roll and honed every single shift, no exceptions. Now cooks just grab whatever is on the magnetic strip and push. Am I just being an old grump about this or are knife skills really slipping in the kitchen?
