My regular at the diner finally told me why he sends everything back
There's this older guy who comes into the place I cook at every Tuesday morning, around 6:30. Always orders the same thing, eggs over medium, wheat toast, bacon extra crispy. And for like 4 months straight he sent breakfast back at least once. One day I just walked out and asked him straight up what was wrong. He looked at me for a second and said "I'm not trying to be a pain, I just want to see if you'll actually fix it or just refire it the same way." That hit different. He was testing whether we were paying attention, not to the ticket, but to the plate. I didn't say anything back, just nodded and went in and re-did his eggs with a little more butter and pulled the bacon off the flat top a minute sooner. He ate it clean. Next Tuesday he tipped me $20 and said "That's the best batch you've done." Has anyone else had a customer who was low-key grading you without saying it? How do you spot that before you burn like a dozen plates?

You just gotta watch the little things, like if they're staring at the plate before they take a bite or pushing stuff around with their fork. Once you realize they're not complaining about the food itself but about how much you care, you start checking your own work before it leaves the window. It's a pain at first, but honestly those customers end up being your best regulars because they actually notice when you step up.
