I think everyone's wrong about how to fix a broken hollandaise

I spent 45 minutes trying to whisk in cold butter to save a split sauce before a brunch rush. Has anyone actually gotten that trick to work, or is starting over the only real fix?

Honestly, my buddy tried the cold butter thing once and it just made a weird, greasy mess. He had to trash the whole batch and start fresh.

Yeah, the cold butter trick works but you need a tiny splash of hot water first, like a teaspoon. Theasmith's buddy probably added too much cold fat at once.

Did you ever try grating frozen butter instead of cutting it up smaller?
