I finally stopped salting every layer of my bolognese after a sous chef yelled at me

This guy at my last gig told me I was over-salting because the pancetta and parm already carry so much salt, and he pulled me aside mid-service to prove it by having me taste a batch without any added salt. It came out perfect, now I only salt at the end if it needs it. Anyone else get humbled by a simple seasoning mistake?

Did you catch yourself oversalting things after that?

OMG wait you're telling me that's a thing that can actually happen?? I had no idea your taste buds could get thrown off like that from just one dish
